Sa totoo lang, napaka sophisticated at enduring ng panlasa ng Pinoy. Naalala ko yong mga kalaro ko noong kabataan ko na matapos makatikim ng imported na champagne ay agad nila itong dinura.
"Pwe! Pan-os na man diay ning syampina oy! Aslom na!" (Pwe! This champagne is spoiled! It tastes sour!)
Pero kaya nilang tiisin yong sobrang alat ng tinabal at ginamos, at sa maasim na suka din sila nagsasawsaw ng bulad at sinugba.
Walang ring limitasyon ang matamis naming panlasa. Matamis na kung matamis, kaya ang local candy namin noon ay balikutsa na gawa sa pinakulong gata ng niyog at brown sugar. Kaya laging gulat ng mga Italyano ng matikman nilang manamistamis at napakapula ng espaghetti nating mga Pinoy.
Sobrang matiisin ang panlasa nating Pinoy. Naalala ko yong maanghang pa sa maanghang na pulutan namin noon sa Inopacan, Leyte na tinatawag nilang taguto na gawa sa pinong-pinong tinadtad na buong karne ng manok (laman, buto, pakpak, bituka, batikulon, puso, ulo, at tiil sama-sama na) at hinaloan ng parehong takal o sobra pang dami ng tinadtad din na siling kulikot (siling labuyo na sobrang liit). Napaiyak na nga yong tagaluto ng gisahin nya tong pulutan namin. Isang pulutan na para bang ayaw ipakain sa amin dahil sa sobrang anghang. Malulunok mo ng diretso pati yong durog na durog na buto ng manok. Mabuti pa yong Bicol Express mapakain mo pa yong nanay at tatay, pero sa taguto baka dila ray way labod nimo do! (paki-translate na lang). Pero natiis naming ubusin yong taguto kahit na kisom (sourish) na yong bahalinang tuba (aged coconut red wine) na tinatagay namin. Walang lasang di pa natikman ng Pinoy. Sa ayaw man at sa gusto.
Isang kuwento ko pa lang yan. Bawat isang Pinoy sa buong Pilipinas ay may kanya-kanyang karanasan sa panlasa na di nya malilimutan. Bawat rehiyon ay may paboritong lasa. Sinubukan kung hagilapin ang iba't-ibang panlasa ng Pinoy at ito yong iilan sa mga nailista ko.
Ano bang panlasa mo ha? Meron ba ako nyan? Of course, I have to ask it politely. Pagkawala ako nyan, at meron ka nyan. Puwede bang paki-share mo na lang para makumpleto natin tong listahan.
